Sun dried tomatoes

I am a huge tomato fan. Cherry tomatoes, plum tomatoes, beef tomatoes, heirloom tomatoes, tomatoes on the vine, raw tomatoes, grilled tomatoes, slow roasted tomatoes, tomato soup, tomato ketchup, tomato sauce, tomato juice… I think you get the picture.

I also have a certain penchant  for sun dried (or sun kissed) tomatoes, but given the delightfully drizzly and overcast weather systems affecting the UK, I always thought I’d have to rely on  the supermarket to feed this craving.  That was until now…

So here we go.  Homemade sun dried tomatoes! (although if we are being strictly correct: oven dried tomatoes)

Step-by-step guide to powerful little bursts of tomato-y goodness:

1.  Pick/buy a variety of tomatoes

2.  Cut into halves or quarters

3.  Sprinkle with salt

 

 

 

 

 

 

 

 

 

 

4.  Put in oven at  ~50 degrees (celcius) overnight (or your could heat the oven to ~100 degrees, put in the tomatoes, turn the oven off and leave)…

…And the next morning, voila!

Perfect for salads (or snacking or… well use your creative talents to guide you)
